A simple method for Spatchcock Chicken perfect for entry-level charcoal BBQ. Cooked on the Charmate Corona Kettle BBQ using Rum and Que Soft Coq Rub and Meat Juice, this easy recipe is a fool-proof method for delicious chicken.
- Set up the Charmate Corona Ketlle for indirect cooking using Charmate Black Wattle Charcoal. Open the vents and aim for a temperature of 300-350°F.
- Prep the chicken by removing wing tips (optional) and cutting between the knuckle and leg bone. Flip it, cut through the breast, and remove any unwanted bits.
- Generously coat the chicken with Rum & Que Soft Coq Rub Let is sit for 25 minutes.
- Put the chicken in the Corona Kettle with legs facing the coals. Add a chunk of Charmate Cherry Wood directly over the charcoal. Cook until the chicken reaches the temperatures bolded below.
- Once the chicken reaches temperature, remove it and let it rest for 10 minutes.
- Glaze with Rum & Que Meat Juice, carve and serve.
