Bourbon & Tomato Mop Sauce

'Mopping' sauce is a thin sauce that is brushed on food during the cooking process to keep moisture in and add loads of flavour. This Bourbon & Tomato Mop Sauce is perfect for low and slow cooking. It's best made ahead of time, so the flavours have a chance to intensify.

4 cloves minced garlic
½ onion, minced
¾ Cup your favourite Bourbon
½ tsp ground black pepper
½ Tbsp salt
2 Cups tomato sauce or Passata
¼ Cup tomato paste
⅓ Cup cider vinegar
¼ Cup Worcestershire sauce
½ Cup packed brown sugar
If you like it spicy, try adding:
⅓ tsp Culley’s Chipotle (Medium heat)
or
⅓ tsp Tabasco sauce or Kaitaia Fire (both Hot)

  • Aim to mop the sauce on with a brush, at regular intervals 4 times during your cook.

  1. In a saucepan or cast iron skillet, combine garlic, minced onion (blitzed in a blender) and Bourbon. If you have fired up your offset, you can use the offset top as a hotplate. Simmer for around 10 minutes (stir frequently so the bottom doesn't stick).
  2. Mix in all other ingredients. Stir well.
  3. Simmer for around 20 minutes, stirring frequently.
  4. Either: Remove from heat, cool and refrigerate to intensify flavours overnight.
    Or, you can start mopping straight away.
  5. If you like a smoother sauce, you can strain the mop sauce through a sieve.
  6. Apply to meat as a mop sauce 3 to 4 times during the cook.
